2011 VF Sauvignon Blanc Sem

Tasting Notes
COLOUR Bright pale straw with vibrant green tinge. NOSE An intoxicating blend of green apple, zesty lime, lemon leaf, and the powerful scent of lantana and pot pourri burst from the glass. Complex savoury notes reminiscent of roasted bay leaf and mild smoked cheddar add a unique dimension to the nose. PALATE Defined by a full and generous core of natural acidity that supports and propels the intense lemongrass and lantana flavours for remarkable length. A distinctive textural mid palate and finely threaded oak spice provide the extra structure and character.
Winemaker Notes
Sauvignon Blanc provides tropical passionfruit aromatics which are complemented by the Semillon’s lime and floral notes. The wine’s complexity is enhanced through using juice of various clarities which is fermented with specialised yeasts to increase the aromatic lift of each variety. A portion is fermented in new French oak which adds aromatic complexity and instills a delicate influence of fine grain tannins. This year, again, a tiny portion of the Sauvignon Blanc was fermented entirely on skins, adding savoury elements and texture to the wine.

An exceptionally dry Spring which resulted in balanced small canopies and early fruit development stages. A very warm Summer with timely rainfall around veraison. Rapid ripening followed with a very early vintage. Whites were harvested in a short time frame.
