Tasting Notes
COLOUR
The appearance of the wine is of bright straw with green tinges.
NOSE
The nose shows aromas of intense lime and some grassy nuances with hints of tropical fruits, green passionfruit and an underlying complexity provided by yeast lees and delicate spice from high quality French oak.
PALATE
The palate is juicy, with pristine, fresh fruit characters complemented by crisp, minerally acidity. The richness of flavours increases across the palate, displaying green passionfruit and lime balanced perfectly by the subtle influence of French oak.
Winemaker Notes
The Semillon and Sauvignon Blanc vineyards were picked at slightly lower Baumes than usual in Margaret
River, capturing fine aromas, crisp primary fruit flavours and good, clean acid structure.
The dominance of the Sauvignon Blanc, a small percentage of which was fermented and matured in new oak, provides tropical passionfruit aromatics complimented by the grassy, citrus notes of Semillon.
The complexity of the wine is further enhanced by using various levels of juice clarity and fermenting with
specialized yeasts designed to increase the aromatic lift of these two varietals.
