The 2007 Vasse Felix Sauvignon Blanc Semillon shows lifted aromas of passionfruit, lime and spice with an added savoury oak complexity from the small parcel of wine that was fermented and matured in French Oak.
The palate is fresh and vibrant upfront, with a bright acidity leading to rich fruit flavours and a creamy midplate derived from the short about of time the wine spent aging on its yeast lees. The wine shows great length of flavour with a refreshing mineral acid finish.
The dominance of the Sauvignon Blanc, a small percentage fermented and matured in new oak, still provides tropical passionfruit aromatics complimented by the grassy, citrus notes of the Semillon. The complexity of the wine was further enhanced by various levels of clarity in the juice for fermentation by spezialized yeasts designed to increase the pungent characteristics of these varieties.
